Ingredients
  

For the pretzels

  • 2.5 tsp yeast
  • 2 tbsp sugar
  • 1.25 cups warm water
  • 4 cups flour
  • 1 tsp salt
  • 1/4 cup baking soda
  • 2 cups hot water
  • 2 tbsp butter melted for brushing
  • coarse sea salt

For the jalapeño cheddar dip

  • 2 tsp butter
  • 2 tsp flour
  • 3/4 cup milk
  • 1/2 cup cheddar grated
  • 2 fresh jalapeños seeded and chopped
  • 1/2 tsp smoked paprika

Instructions
 

For the pretzels

  • Add the yeast, water and half the sugar in a small bowl for about ten minutes until creamy.
  • Mix the flour, salt and remaining sugar in a large bowl. Add the yeast-water mixture and knead until smooth, about 5 - 10 minutes.
  • Cover the dough with plastic wrap or a damp towel and leave in a warm place to double in size, about an hour.
  • Preheat the oven to 430 F (230 C).
  • Make a baking soda bath. Add 1/4 cup baking soda to hot water in a medium bowl until it is dissolved. The baking soda is required for browning and flavor.
  • Divide the dough into half and lengthen each half into a rope. Divide each rope into 16 small balls. Roll out the balls into a thin rope. Take two small ropes and twist them together to make one pretzel twist.. Do this for all 16 pretzel twists.
  • Dip each twist into the baking soda bath. Be careful not to let it touch the bottom if you have any baking soda which was not dissolved. Lay the twists on a baking sheet.
  • Brush the twists with melted butter and sprinkle coarse sea salt on top, as much as you like. Place in the oven until brown, about 10 minutes.

For the jalapeño cheddar dip

  • In a small saucepan, melt 2 teaspoons of butter over medium heat and add 2 teaspoons of flour. Stir continuously for about 2 minutes until the paste begins to bubble, but don't let it brown. Add the milk and stir until thickened.
  • Bring it to a boil and add salt and pepper. Lower the heat again and let it cook for another few minutes. Add in the smoked paprika and shredded cheddar and stir continuously until melted, about 2 minutes more.
  • Finally, add in the chopped jalapeño and cook for another minute. Remove from the heat.
  • Take out your pretzel twists. You can brush more butter on top if you'd like. Dip in the jalapeño cheddar sauce and eat everything.
